This impressive Imperial Stout spent two full years barrel aging in Four Roses bourbon whiskey barrels, with another year of extended aging. The result is an incredibly smooth, dark stout loaded with depth and balance between the beer and the barrel characteristics. Rich chocolate aromas blend with those of the bourbon whiskey with barrel notes. Flavors of dark chocolate, caramel, toffee, and it finishes with touches of the bourbon whiskey. You’ll find yourself going back again and again for sips as the beer warms itself up in every taste. Dark, thick and viscous and full of wonderment she drinks silky smooth as it is a low carbonation beer best served at 45 to 50 degrees and meant to be enjoyed slowly.

Local whole cone hops, locally foraged Staghorn sumac, and foraged juniper boughs were added to our koelschip, and the hot wort was transferred onto those ingredients to steep overnight. The beer spent a night in our koelschip to naturally cool and inoculate with local microflora, before we transferred it into oak barrels and pitched a blend of locally harvested wild yeast. Because of this, the beer is not spontaneously fermented, but has influence from the spontaneously inoculated microbes. The beer spent over a year and a half in oak barrels, before we blended select barrels together and naturally refermented the beer over many months in the bottle.

This particular single-year blend was uniquely created in the Spring of 2018 by cooling wort outside in our family vineyard. It was fermented and aged until January 2020, where it was bottled conditioned under cork and later crowned. Koelspring is a rustic pale gold color with an initial medium, mousy head. It’s reminiscent of a Pinot Grigio white wine, with a crisp, zesty green apple character. It’s dry and refreshing, exuding a light, complex floral or honeysuckle note to the overall beer. Like it’s wine comparison, Koelspring should be served at 45 F to retain it’s effervescence and dry fruity character.
